Sisig

The dish sisig is originally from Pampanga; the word "sisigan" means "to make sour" in old Tagalog. It consists of chopped pig parts and chicken liver mixed in a spicy and sour dressing. It is usually a Filipino street meal, and it goes well with rice as well.
